1 Qty Banana peeled and roughly chopped
1 Tsp Coconut Oil
½-1 Tbsp Organic Peanut Butter
¾ cup Rolled Oats (do not use quick or instant)
1 tsp Chia Seeds
1 cup Almond Milk
1 tsp Ground Cinnamon
a pinch kosher salt
1 tsp Pure Vanilla
Toppings:
Walnuts
Dates
Ground Cinnamon
Pure Maple Syrup

A nice boost of fiber and grainy carbs to start your day off. For this recipe, we used Trader Joe’s Organic Peanut Butter. Hope you enjoy!

In a medium-sized pot over medium heat cook the banana and coconut oil for about 5 minutes stirring frequently.

Stir in peanut butter, and add the oats, chia, milk, cinnamon and salt. Whisk well until combined.

Bring to low boil and reduce heat to a simmer, stirring often for 8-10 minutes. Remove from heat and add vanilla.

Scoop into bowl and top with nuts, cinnamon, maple syrup.
